The Dungeness crab season of 2008 has given us the best prices we have seen in years. Just last week in at our local store we found fresh crab for $3.99 per pound. That is a steal! At this price we knew we had to take advantage, providing an excuse to have a small dinner party. Years ago when Brigid and I worked at Copia, we were lucky enough to cook with one of Sonoma County’s finest (and nicest) chefs, John Ash. For his demo we prepared the most delicious crab poached in flavors of Vermouth, ginger, soy, and garlic….need I say more? It was different and delicious. Lucky for us I found the recipe on John’s website: Dungeness Crab with Vermouth.
Dungeness Crabs are at home in the wilds of the Pacific Ocean, all the way from Alaska down to the waters of Mexico. They are easy to handle weighing from 1 to 4 pounds and are quiet pretty with a pink hard shell when cooked. The meat is sweet, tender and can be prepared simply to highlight the amazing flavor. Great accompanying condiments include drawn butter, cocktail sauce, remoulade, and a squeeze of fresh lemon. However you decide to prepare your crab, I encourage you to take advantage of the great price this season and have it more than once in a variety of preparations.
