While bushwhacking our way through the vast forest of goodies at the San Francisco Fancy Food Show last month, we were drawn off our carpeted express lane by beautiful packages in a small, tastefully arranged booth. Though we were a little disappointed that the beautiful packages contained mustards and other bottled sauces, which are pretty much a dime a dozen at these shows, we chatted with the representatives and tasted their samples. And then we tasted some more, amazed by just how right they got the flavors. The next fifteen minutes or so was spent comparing notes on juicy grilled meat dishes onto which we would slather the Moroccan Mustard and the Madras Curry Ketchup. Though we had seen and tasted thousands of products that day, Dulcet Cuisine’s mustards, ketchups and sauces stood out, and made us wish we had some of that Moroccan Mustard when we arrived home that night to cook dinner.
Pam Kraemer started Dulcet Cuisine in 2004 in Portland, Oregon; and like lots of our favorite Oregon companies, Dulcet Cuisine uses natural ingredients and recycled packaging materials, and they source their ingredients from sustainable farms. Their new product release this spring is a line of flavored ketchups, including the addictive Madras Curry and Moroccan Spice versions. We can’t think of anything better to put on a grilled lamburger, except maybe a 50/50 blend of the Moroccan Mustard and mayonnaise. Their sauces, mustards and spice blends have great flavor balance and offer an easy way to bring an exotic touch to your favorite vegetable, noodle or fish dishes. A notable new name in the crowded world of fancy condiments, Dulcet Cuisine will keep us looking for their next great flavor.
